Promoting craft skills

defence-chef-traing3We are committed to promoting the development of culinary craft skills and encourage both our own employees and our CCM colleagues to take part in competitions such as Sodexo’s annual Salon Culinaire and the MOD’s annual Exercise Joint Caterer event.

Both Salon Culinaire and Exercise Joint Caterer are fantastic examples of the development of craft skills within both Sodexo chefs and the military chefs who work alongside us.

Joint civilian/military teams have achieved great results at these competitions and are an excellent example of partnering at its best, where military and Sodexo chefs have worked together as a team, sharing their craft skills and achieved great results.

Annual Salon Culinaire
The Defence team competes strongly at Sodexo’s annual Salon Culinaire and were awarded in the 2012 competition:

Silver medal for joint civilian/military team’s craft skills

The Defence team from the North of England team made up of Alan Beteridge, Catering Manager, Imphal Barracks, SSgt Darryl Keenan, Master Chef, 2 Signal Regiment and Brian Walmsley, Head Chef, QEB Strensall won a silver medal in the 2012 Sodexo Culinary Team Challenge. The team’s menu included Andalouse of pork, lamb four ways and assiette of lemon.
