1. What does your job entail?
After I won the Bocuse d'Or culinary contest, I had a desire to pass on what I’d learned, with an emphasis on originality and creativity. A few months ago, I joined the faculty at Ecole Lenôtre to teach courses for professional chefs. From time to time, I also do work as a culinary consultant.
2. What is your background?
I grew up in Megève. When I was 14, I decided to devote myself to cooking. Even in those days, I was interested in learning about different techniques. I was lucky enough to work at a series of outstanding restaurants, alongside Georges Blanc at Le Splendid in Lyons, with Michel Guérard at Les Prés d’Eugénie, with Michel Kayser at L’Alexandre and at Taillevent in Paris, before joining Lenôtre's Ateliers de Création in 2007.
3. How does your work enhance guests’ Quality of Life?
As a chef—both artist and technician—I'm always looking for ideas. I feel the need to create and innovate at all times. I like the idea of surprising people when they taste my creations—and giving them enjoyment! I've planned a tournament finals menu for the French Tennis Federation restaurant that is designed to do just that. Among the entrees are a whole Bresse chicken with a savory-infused jus, and turbot and lobster served in a beurre blanc sauce. The dessert selection includes an airy chocolate and raspberry dish.

Creativity – Excitement – Commitment.
5. Share an experience with us from your work at Roland-Garros.
When I first arrived at center court, I was amazed at how close the players and spectators are to each other. It's fascinating how a bond develops at intense moments like that. It reminded me of the Bocuse d'Or final in Lyon. From where I was working in my “box,” I could hear the applause and cheers of all those who supported me enthusiastically throughout the entire five hours and 35 minutes of the event!
